Pear and Blackberry Upside Down Cake

Ingredients

1/3 cup golden syrup
1 lemon, rind grated
1 cup blackberries
3 ripe pears, peeled, cored and quartered

For the cake:

½ cup butter, softened
½ cup sugar
1 cup flour
1 tsp baking powder
¼ tsp salt
2 eggs
cream or custard, to serve

Method

Preheat the oven to 180C.

Lightly butter a 8 inch cake dish. Spoon the golden syrup over the base of the dish, then sprinkle over the lemon rind. Scatter over the blackberries and pears, cut side up. Beat together all the cake ingredients with an electric blender for 2-3 minutes until light and fluffy and pour over the fruit. Bake for 35-40 minutes. Cool in the dish for about 10 minutes before loosening the edges and inverting on to a plate. Serve warm with cream or custard.
